Stress-Reducing Hobby!

Just thought I'd share some images from an all too neglected hobby-- baking cupcakes!!

I made these for my students! I do believe I am the best teacher ever! :)

These were made for my Mom's and Brother's birthday! (Justin helped decorate them!) Sadly, before the cupcakes even made it out of the door for their trip to Georgetown, the cupcake holder's handle broke and all of the icing smeared! :(

Justin and I made these for my Father-in-law's birthday! :) We consider cupcake making to be bonding time, now!  These cupcakes were HUGE! Please note the picture below:

The cupcake on the left is a normal sized cupcake. This just shows how humongous the cupcake on the left is! :)

My favorite part:
Buttercream Icing:
Yield: 3 cups

1 cup solid white vegetable shortening
1 teaspoon vanilla
2 tablespoons water
1 lb. powdered sugar (approx. 4 cups)
1 tablespoon meringue powder

(I do not have meringue powder so I make meringue first with 1 egg white, 1/4 tsp of cream of tarter, 1/6 cup of sugar, and a very small pinch of salt and then follow the below directions. )

Cream shortening, flavoring, and water. Add dry ingredients and mix on medium speed until all ingredients have been thoroughly mixed together. Blend an additional minute or so, until creamy.

If you need to thin the icing, just add a little bit of water at a time until you reach the consistency you like. If you have any questions, just ask!

Surviving a Rivalry.

The second college football game of the season. If you're a diehard Georgia Bulldog or Carolina Gamecock, you know that the game will be a hard-fought battle. Regardless of the outcome, by the end of the game, your nerves will be frazzled and handfulls of your hair will be scattered about the room. Imagine, then, that you are a diehard Georgia Bulldog who happens to be married to a Carolina Gamecock (or vice versa).

For the first two years of our relationship, we braved the dangers and attended the annual clash between the Palmetto State Poultry and the Classic City Canines in their respective stadiums. Both times, the 'Dawgs wound up atop the bloody heap, and both times, we considered ourselves to be quite fortunate to be on speaking terms by the end of the weekend.

Now that we are married, however, the stakes are higher. We're talking about wedding gifts here, people. Why risk settling for dual custody of a red KitchenAid mixer and a fabulous set of Calphalon Cutlery over a silly game? This year, Casie and I knew better than to risk our marriage at a stress-inducing stadium, and instead planned a weekend getaway where we could relax and watch the game in the comfort of our own hotel room. We needed a something a little different. Something luxurious. Something exotic. Something like....Atlanta?

That's right, Atlanta. For country folks like us, Atlanta is about as far removed from what we know as "The South" as Madagascar. Of course, we had other reasons for choosing such a seemingly pedestrian locale for our getaway. For one thing, the price of a night's stay at a four-star hotel in Atlanta is comparable to that of a two-star hotel in a more rural tourist destination, like Boone, NC or Berea, KY (I know, I checked). To find the best deal on a hotel, I always turn to my favorite travel site: Hotwire.com.

The downside to Hotwire is that you don’t know, specifically, what hotel you’ll be staying at until you’ve already put down the cash (or credit card digits, more specifically). Casie and I have been very lucky when using this website – we used it to book two nights in San Francisco on our honeymoon earlier this year – so once again, we threw caution into the wind and plopped down $170 for two nights in a four-star hotel based on little more than a vague map and a few rave reviews. What a surprise when we found out that our room was on the 52nd (out of 72) floors of the famous “Peachtree Plaza” – the tallest hotel in the Western Hemisphere!

When we checked in on Friday night, we opened the door to our room and were immediately greeted by a panorama of city lights. It was Atlanta like I’ve never seen it before. It was beautiful. It was exactly what we needed.


Unfortunately, our camera died after snapping these two photos so we were unable to document the rest of our weekend (and too cheap to buy new batteries).

The following day was spent as lazily as possible. A day of sleeping in, eating in bed, and watching college football was exactly what we needed. I, of course, could have done without a 17-6 loss to team coached by Steve Spurrier, but in this relaxed environment, I was able to look at Casie without an heated pool of misplaced rage dripping from my ears within a couple of hours. It didn't hurt that immediately after the game she went down to the lobby and came back with a pack of Reeses, my favorite snack!

On Sunday, we decided to act like proper tourists and visit Zoo Atlanta. There are many attractions in Atlanta, of course, but what really set Zoo Atlanta apart is their ‘college student discount’. Nevermind the fact that neither of us are college students. We both have our old college IDs, which, as it turns out, are just as good. I won’t bore you with the details of our visit, except to confirm that yes, it would, indeed, be awesome to be a panda at a zoo. Who wouldn’t love to spend every day garnering fascinated attention by merely reclining in a hammock and munching on a never-ending supply of bamboo? Mmmm…bamboo.

Monday, unfortunately, brought us back to the real world, but I think Casie and I would both agree that next year’s UGA/USC game should involve a similar escape from the ordinary.

Absolutely wonderful...no matter how you look at it.

What a beautiful life we live. I came to the realization this morning on my drive to work that sometimes I'm not as thankful as I should be. Sometimes I overlook all of the blessings in my life just because I am stressed at work, have lots of bills to pay, and just plain tired.

Although Justin and I have seen our share of struggles over the past three and a half months, we are extremely blessed and I do not want to overlook that.

As the day went on I was reminded of how good I have it and how many wonderful people I have in my life.

I arrived at school and as I was signing in in the work room another new teacher said "Mrs. Tyson! I brought you a treat today!" Oh, I love treats! She said "It's granny made!" Oh, I do love granny made goodies even more! As I made my way back to my classroom after visiting the 6th grade refridgerator, which is where she stashed my yummy banana pudding, I was grinning from ear to ear. It is always nice to know someone is thinking of you, even in the small things! Mrs. Coyle is so precious!

The day went smoothly and the kiddos were well-behaved for the most part, which always makes my job a little easier. During 8th period I had a visitor. One of the special education classes in our school made cookies today and one of the students brought me one! A COOKIE with icing! I was so delighted.

Unfortunately I had to stay after school for car duty and to catch up on some paperwork. My phone died at some point and I couldn't call and tell Justin I was going to be late. Well, it didn't matter. When I got home my wonderful husband had dinner on the grill (yummy lemon peppered chicken, grilled squash, onions, and peppers) and yeast rolls in the oven. And to my surprise, in the middle of our newly refinished table were beautiful yellow Lillies. Today was awesome!

During dinner he informed me that I needed to pack my bags because we were taking a little trip this weekend...just to get away from the hustle and bustle of our busy schedule! Since we both work late most nights and are so busy with everything else on the weekend, we haven't had a lot time to ourselves recently. Gotta love my thoughtful husband!

What a wonderful life this is.
